I am using VTune on Linux and the default disassembler syntax is AT&T.. is there any way to change it to Intel's? I've looked around the preferences menu but I can't seem to find anything.

Yes. You are right!
Default disassembly view syntax is not Intel's. And there is no change optionon preference menu.

This could be a feature request to VTune Analyzer.
