We've recently purchased some SuperMicro servers with the Intel E810 network card and getting very spotty performance when using a 25Gb SFP. iperf testing on idle systems would seem fine but then crash to sub-gb/s for hours, only to recover later. We have put 10G SFP in place that seems to keep things at 10Gb/s but not having 25Gb performance seems like a waste.
I'm working through the performance tuning guide but wondering if there are any other settings we should be looking at. Opening a ticket with Intel or SuperMicro?

CPU: AMD EPYC 9534 64-Core (2)
RAM: 1.5TB
DISK: (full load) 24*8TB nvme
NIC: E810 (E810-XXVDA2)
