This is actually a fairly involved question. But probablythe biggest difference is how the two technologies are targetted. IPMI is targetted at server systems, and AMT is targetted at business systems (desktop or laptop).

IPMI has been around for longer than AMT, and there are elements of AMT that were built using the IPMI spec (primarily the PET alerts that can be configured in AMT). AMT has portions that were built on IPMI, the PET alerts that can be configured in AMT are from IPMI.

Both are intended for remote management of systems, although the exact feature set is different. To be honest I'm not as familiar with the IPMI feature set, so I can't give a detailed run down on all the differences.
