I have Ubuntu 18.04 LTS. Is it possible to develop SGX applications on this version of Ubuntu, even though it seems to not be officially supported?

Ubuntu 18.04 is officially supported. Take a look on their official repository:

Oh, I thought SGX was not officially supported on Ubuntu 18 because the readme for the linux-sgx-driver: https://github.com/intel/linux-sgx-driver says that the following two versions of Ubuntu are supported under the prerequisites section.
- Ubuntu* 16.04.3 LTS Desktop 64bits
- Ubuntu* 16.04.3 LTS Server 64bits
