I know Intel has Windows tools to check cpu speed and temp, what about Linux tools for checking core temp?

In regard to your question, the tool that we normally use to verify the speed and temperature of the processor is the Intel® Processor Diagnostics Tool, that actually it is available for Linux, please use the link below to install it:

Now, according to the information on the following link, the tool is fully compatible with Fedora* revision 20, 32-bit and 64-bit:
