Can anyone point me in the direction of compatible modems that would give me the speeds claimed in the specs, or tell me how to identify such modems myself?

I have a NUC8i7BEH which has Intel Wireless ac 9560 that according to the specs can reach speeds of up to 1.73Gb

I understand that this would depend on hardware compatibility, and at the moment my modem is an ASUS DSL-AC68U, which according to Network and Sharing Centre, gives me a speed of approx 860Mbps

Not understanding the technology enough to nut this out myself with the specs talking about MMO and 160Ghz or whatever, can anyone point me in the direction of compatible modems that would give me the speeds claimed in the specs, or tell me how to identify such modems myself?

You answered that yourself. Look for AC routers that support MU-MIMO and 160Ghz.
