Could you tell me how to enable hardware timestamping with the intel NIC E810-XXVDA4T ?
What driver version would I need with a low-latency kernel on ubuntu 20.04 ?

Yes, E810 can support PTPv2.1 version - Hardware (HW) timestamp option
If you are using Windows.
Open Windows* Device Manager.
Double-click Network adapters to expand the section.
Right-click the Intel® Ethernet Connection (model) and select Properties.
- Click the Advance -> Select PTP Hardware Timestamps - Change Value to Enable
