Appropriate development board?

I'm wondering if you guys could help me find a decent board for making some embedded projects. Essentially all I need is a Cyclone II chip with some flash ram, sdram and a config chip, and alot of headers to plug in whatever peripherals I feel like/need. As i'm going to try do some stuff in an RTOS as well. 

 

I saw some Microtronix firefly and thats something along the lines of what i'd like, with just alot of I/O headers and maybe the possibility of getting daughter boards. Is there anything else out there like this? A kind of stripped back devkit with just the essential FPGA chip, ram, flash, JTAG connector for the usb-blaster, maybe a couple LEDs (but thats not essential) and a heap of general purpose I/O headers? 

 

It is essentially to make the software development side happen whilst the hardware is being made, so once it is made; i can just plonk the software that I made on the devboard (so i know it works) right onto the new hardware with a minor amount of reconfiguring pins etc.
