I have open device manager to see the version of my graphics card, but instead of showing: Intel(R) HD Graphics (*number*), It just shows Intel HD graphics (without the number). I need that number, so I can update the drivers to play Minecraft.

Depending on your processor, there may not be a "number".
What is your processor model number?
What operating system?

Well, if you want a number then it is HD graphics 2000:
Worse yet, there is no Intel driver for Windows 10. All you have is the Microsoft generic driver, which lacks features and performance.
You can forget updating your driver. If you are a desktop, you might be able to add an nvidia or amd card. The best solution is to replace your hardware with a new(er) system that is supported.

It is what it is: Intel® Graphics Driver 31.0.101.2134 for 7th-10th Gen Intel® Core™ Processor Graphics
Why do you need a number? with the link I provided, you do not need to search anymore. Freedom from searches is good.

There is no number.
You have "Intel® UHD Graphics for 11th Gen Intel® Processors"
Here is a direct link to the latest driver:

Your processor is not supported under windows 10. There is no driver, except the Microsoft generic driver.
There is no "number". You simply have intel hd graphics.
You might try this driver, although I believe you will be unsuccessful:
Whatever the case, you will not find a driver that will meet the requirements for your minecraft.
If you are a desktop, you might get lucky and find an older nvidia card (i.e. gtx 1050, or such) that you can use.
Best solution? Upgrade to newer, supported hardware.
