I received an email saying there is an IVF update.

There was a message on the forum previously saying the previous update was not important so I didn't update.

Therea re now two updates available Version 2011 (update 5) 29 July 2011 and Version 10.3 (5) 2nd August 2011.

Should I download the 29th July one then the 2nd August one - or only the 2nd August one - or not bother at all?

The previous message was for an 11.1 update.

Composer XE 2011 Update 5 (compiler 12.0.5) is worth getting. The 10.3(5) link you mention is for MKL only. That version of MKL is included in the compiler update.
