I have installed VS2005 on an AMD Opteron 64 bit system then installed Intel Fotratn 9.1 (from the dowloaed update).
I have installed all components (ia32 and emt 64).
When I go to the 'Properties Page' and try to change the platform from IA32 there is no x64.
How do I get access to x64?

In some editions of VS2005, you have to do a custom install and ask specifically for the "x64" support. This is mentioned in the Installation Guide.
Go into Add or Remove Programs and do a Change/Modify of VS2005 to add that support. Curiously, the Standard Edition doesn't need this step!

I have added the x64 support for C++ (the only place I saw anything about x64) and re-installed INtel fortran 9.1.0124. When I start VS2005 there is no way to build a Fortran project??

What do you mean "there is no way to build a Fortran project"?
I suggest you read the Building Applications manual chapter on using projects. That may help you.
