The webpage for Intel Memory and Storage Tool states that the 730 SSD is supported (in the scroll list, 240GB and 480GB). However, the release notes do not mention the 730 SSD. So which is correct?

We are glad to hear that you are interested in using The Intel® Memory and Storage Tool (Intel® MAS). This tool is the latest and more updated software to check all the information related to your SSD.
As you mentioned, the Intel® SSD 730 Series (480GB & 240GB) is listed as valid for the product to use with the Intel® MAS, as shown on the following download link:

To answer your question related to why the Intel® SSD 730 Series does not appear on the release notes of this tool:
As stated in the Firmware Versions for Intel® Solid State Drives and Intel® Optane™ Memory article:

On the Intel® Client SSDs section, almost at the end of the table:
Intel® SSD 730 Series 4.20 No Firmware Update Available
Your Intel SSD does not have a firmware update available meaning, that up to this moment, the release notes are not going to reflect any information related to your drive. The tool is going to be able to check your SSD health and provide you with information and the SMART logs if you extract them by following this guide:
