You may refer to this link: Intel Unison App, for more information. As such, could you please clarify what you mean about changing the default photo editor when you click to open?
Moreover, I do not have sufficient details about your hardware and software configuration to help you. Please run the SSU report so I can check important details such as OS build#, Graphics, wireless driver versions, errors logged in the system, etc).

Yes, you can change the default photo editor on your device. Here's how you can do it on different platforms:
Windows: Go to Settings > Apps > Default apps. Scroll down to "Photo viewer" and select the app you want to use as the default photo editor.
Mac: Right-click on any image file and select "Get Info." In the "Open with" section, choose the desired photo editor from the dropdown menu, then click "Change All."
Android: Go to Settings > Apps > Default apps > Default apps selection. Choose the category "Opening links" and select your preferred photo editor.
iOS: Unfortunately, iOS does not allow you to change the default photo editor system-wide. However, you can open images directly in your preferred editing app and make edits from there.
