According to the specs

The D435 camera has an RGB video feed of 1920x1080 at 30fps.
However, when I run the Intel RealSense Viewer v2.15.0 with a standard USB extension the maximum RGB resolution and frame rate I can get is only 1280x720 @ 6fps!!
What type of USB cable do I need in order to capture a 1920x1080 @ 30fps RGB feed?

The 1920x1080 resolution has a maximum of 30 FPS. All RGB resolutions below that support 60 FPS.
You would not need a USB cable other than the default one supplied with the camera to show 1920x1080 at 30 FPS. It does not have a 60 FPS mode at that resolution though.
