How does gesture recognition in Intel, such as stone, scissors, cloth, etc., come from?

In the old series of RealSense cameras that supported hand joint tracking (F200, SR300), they could refer to a map of the joint points and work out what gesture is being made using that reference. This map was stored in the hand tracking module file, I believe. It is explained in the document linked to below, along with a map diagram of the hand joints.
