New 14900KS user, setting up defaults

Hello, I have acquired a 14900KS along with an Asus Dark Hero.

 

I am concerned about its integrity over time and I would like to make sure I leave it at factory settings. Asus with default BIOS uses MCE (Multi Core Enhancement) so it is not valid.

 

What should I do to leave my 14900KS with default values? Should I just disable MCE and enable my XMP?

 

I did some undervolting and looks like there is Thermal throttling when getting near 85ºC but not above. Is this also intended?

Also I've seen my Vcore reaching 1.563 while working on light apps on the desktop. Is this safe?
