New i7-6700

I just bought a Dell XPS 8900 with a core i7-6700 processor. Is that the latest, 6th generation, or could it be a model from last year?

The Intel® Core™ i7-6700 is the latest 6th gen processor available in the market. It was launched on the third quarter of 2015.
