According to the Processors Technical Library, Intel Xeon E processors (Coffee Lake) are fully compatible with the following Linux distributions:

Ubuntu*

SUSE

Red Hat* Enterprise (64b)

Been said that you want to make sure with the board OEM for full Ubuntu compatibility (drivers and software)
