Will both of them will be able to run it easily ? Which of the the will be better ?
Will they use Turbo Boost to run it or not ?

Since the game developer is the one that determines the hardware requirements for their games, and also they are the ones that perform the tests, they are the ones that can properly answer your question regarding if any of those processors will support that game or not.

You're comparing a desktop system (Core 2 Duo E6750, etc) to laptop PCs, which is not easy. (BTW, a GT 140 does not exist.)
It's not the CPU that will determine if you can run Crysis, but the GPU, as they do most of the work with games.
The 525M graphics chip is a lower end model, but then so is a GT240 and HD6570. The 525M might only barely play Crysis 2, well known as one of the most demanding games, and then only on the lowest settings. "Optimus" means the GPU will turn off when not gaming, and use even lower quality graphics, no help at all for games.
Look for a better GPU chip, check NVIDIA's website to compare their mobile graphics chips:
