I have a refurbished Dell Latitude that has windows 10 but still has the discontinued Intel Core i5-2520M processor. I think because of this I can't upgrade my video graphic card and therefore can't do much gaming. Anyone know how to go about upgrading my processor?

There is nothing you can do. If you do upgrade the processor, you will have to ask dell which processors are compatible with THEIR BIOS. Then, you could select from those.
In all cases, you will be using the Microsoft generic graphics driver, which lacks features and performance. There is no Intel driver for windows 10 for your processor graphics.

Just to reiterate, there is no processor upgrade that will improve the graphics situation that you have. The only way to fix this problem is with a drastically newer laptop.
Sorry we didn't have a better answer,
