I'm finding an official document associated with the memory layout of Intel x86 real mode. Where should I go to find it?

I suggest that you start by looking in the Intel® 64 and IA-32 Architectures Software Developer's Manuals. You can download them from here: https://software.intel.com/content/www/us/en/develop/articles/intel-sdm.html. I would think that what you want will likely be found in Volume 3 (System Programming Guide).
