Actually we are working in our systems with the Clovertown (L5320) processor. I would like to use the newest generation of Xeon processors. So I have to find a processor with an equal or higher performance. My question is, if the actual dualcore processors Gainestown (E5502) are as fast as the L5320 or if I still need a quadcore processor.

It's a system with dual CPU and we use every processor for about 40%.

Whether one is faster than the other, is going to depend entirely on your applications, unfortunately. There's no easy "yes" or "no" answer.
