Just don't scan it then...
If you mean that you want to scan a model that does not have texture, then that's why the R200 has an IR projector. It puts IR dots in the object, even if it is a white wall, the points will appear in different locations on each IR camera, so it will be able to get depth through stereo.

Could you create the model with texture mode on, then replace the texture file with a solid colour?
Or maybe load up the obj file and replace all the colours in it with the same number (or an average of the R, G and B values of each vertex so you get some shading)? Look at how the sample converts the model into Javascript data for the HTML viewer for ideas of how you might go about doing this.
