You can not take screenshots inside of the XDK, unless you print screen and then put it in Paint/Photoshop and resize. With Cordova, you can not say only a specific screen size. When you upload your assets to iTunesConnect, you can upload only sizes for certain devices, but I dont think that limits the devices that you can install it on.
