Hi Denis,
the signature checks are a security feature. You would need to have the signature key from the phone manufacturer in order to sign you own firmware and OS.
With the Mobile Development Kit for Android there are some tablets which you can unlock so that you don't need the signature key. There is no phone with an unlocked boot loader which I am aware of.
