Good Day All
I have a Lenovo Laptop - V15 G2 ITL (11th Gen Intel(R) Core(TM) i7-1165G7 @ 2.80GHz 2.80 GHz) with the following graphics card
Intel(R) Iris(R) Xe Graphics
I have looked up the card, and it suggests that I should be able to support 4 monitors, however I can only seem to extend to 1.
There is 1 x HDMI port, which I am using for a second screen, but I would ideally like to have 2 external monitors, with my laptop set to the side, so looking to duplicate the laptop display on 1 extra screen, and extend to the second. I have tried USB-c Docks with HDMI ports, and it wont seem to find the second screen, and today I tried a USB-C to HDMI cable but this also has not found the display.
Any help in how I can get the second extra screen recognised would be much appreciated

It's certainly true that the processor has support for up to 4 displays, but this laptop is a *horrible* junk design, with absolutely no support for the connection of a second external monitor (as least as far as I can see). There doesn;t seem to be a capability for support through its USB-C port at all. Still, all is not lost; provided you can afford the cost, you can use a product like this: https://www.amazon.com/dp/B00H91BQ7Y to add an additional graphics engine and support that second display. Now, all that said, understand that this will be a low-performance display and definitely not for gaming. Still, it gets you there.

P.S. That adapter is purely an example. I have one - and it works adequately - but I bought it when it was on sale and a lot cheaper. You will see plenty of other solutions, some cheaper, some more expensive. There are even solutions supporting multiple displays if you want to go there. There are even USB docks that include a graphics engine as well. You can do a general search on Amazon with search string "USB graphics adapter".
