The Quartus GUI launcher is located at:
<quartus_install_dir>/quartus/bin/quartus
And the Quartus shell launcher is located at:
<quartus_install_dir>/quartus/bin/quartus_sh
I'll assume you have the basic Linux / bash know-how to take it from there, to set things up to launch Quartus on your system however you wish.
