you reommended to update the BIOS step-by-step, version-to-version.
Is there any drawback if I refresh this server in one step, right to the newest BIOS/ME/BMC/FRUSDR version?

The recommendation to update the BIOS step by step is not because of any drawback if jumping from versions. It is because it won't allow you to a multiple step update. If you look at the Readme file posted in the BIOS download page you will see there are previous requirements in order to update to a desired version. If this previous version is not meet then the update process will stop and won't allow you to continue: This is the Readme file for version 02.01.0013 https://downloadmirror.intel.com/30174/eng/Readme%20and%20Update%20Instructions.txt
SYSTEM HARDWARE and FIRMWARE REQUIREMENTS
*************************************************************************************
To update the system firmware stack to the versions included in this update package,
the currently loaded system firmware stack on the system must meet the following:
System BIOS - 02.01.0012 or later
ME Firmware - 04.01.04.381 or later
BMC Firmware - 2.48.89b32e0d or later
FRUSDR - 2.00 or later
