I know that each processor has a list of compatible memories, but does the GPU memory need to be compatible with the processor too? For example, if my processor is compatible with 2666Mhz memories can I have a GPU with faster memory?

I assume that you are talking about discrete GPU adapter (rather than Integrated GPU). The CPU is not using the memory of the Discrete GPU. So, this GPU memory (Graphics RAM) is not affecting the CPU. However, you should check that the Discrete GPU is compatible with your computer/motherboard. Check this in your OEM Support site.
