Intel(R) Wi-Fi 6 AX201 160MHz suddenly requires adapter setting reset with every start up

WifFi signal strength at frequented locations are also noticeably weaker than normal.

I downloaded and reinstalled the driver.  So far so good.

I understand that you were getting weaker Wi-Fi signal strength but then reinstalling the driver for your Intel® Wi-Fi 6 AX201 gets you back on track.
