I've inherited a Agilex-7 Model AGIB027R31C2E2V

I just want to write a trivial code to see if it works.  Where can I find the pin assignments?

Do you mean this is a dev kit?  Create a design in Quartus and use the Pin Planner from the Assignments menu to set this up.  To know what pins connect to what, there should be kit user guide assuming this is a dev kit: https://www.intel.com/content/www/us/en/products/details/fpga/development-kits.html
