I'm hoping you can help. We're running a Microsoft Surface through a Microsoft Surface dock. We're trying to connect to two ASUS 248VG monitors. We tried using HDMI and then Mini Display Port cable, but neither seem to work.
1) Is this a supported configuration?
2) Do we need to change anything to make it work? Any special drivers or settings?

Microsoft cannot help you with their product(s)?
HD 620 graphics support up to three monitors. How the OEM (Microsoft) implements the graphics is a different story. They made the Surface, and they made the dock. I would start there.

Thanks, we tried changing to 60Hz changing the settings on the laptop. No luck.

There is a lot of hardware and software in this chain.
1) User
2) Two Asus monitors, presumably with DP chaining?
3) Microsoft Surface Dock with the HDMI and DP connectors
4) Microsoft Surface with a Microsoft motherboard and bios
5) Microsoft Windows 10
6) All of the associated cabling, and adapters (which is a no-no)
7) Finally, the processor with the graphics
What you have done is to assume it is the Intel graphics. As I suggested, you need to speak with Microsoft, and verify with them that their device supports three monitors, and how. And, regarding the drivers, those should come from Microsoft as well. And, a bios update (only from Microsoft) would not hurt. And, there may be some sort of firmware update for the dock, again from Microsoft. And, if you are looking at DP daisy-chaining, you need to verify that the Asus monitors support that. And, the quality of the cables is very important.
And, and, and...
As I said, the processor supports 3 monitors. Since Microsoft made the surface and dock, I would be on the phone or in contact with their support team first. Without checking all that I have listed, and to assume the processor graphics are the problem, coming to Intel support is a bit premature.

I appreciate the feedback. I wasn't assuming anything, just looking for some help and hoping somebody had run into this before. Thanks for your help, you make a good point to start at the other end of the stack.

Also,as I said, you should use only the graphic driver from Microsoft.
That said, if you really want the latest from Intel, you may be able to install it. Be aware that Microsoft likely modifies the driver to suit their platform, so this may work, may work partially, or may not work at all.
